Iron Goddess, aka Tie Guan Yin, is slightly oxidized retaining most of it’s own character. It carries a warm fresh floral note without being overbearing or overwhelming. Distinctive aroma of the tea liquid comes from the soil and water in high elevation where the tea plants are grown. Each leaf has to include a good portion of the young twig. There are minimum 12 steps to process Iron Goddess before subject leafs to further roasting and/or scenting. Each tea estate keeps secret and tradition of it’s own processing method.
